Sugar paste or fondant icing is the most widely used and most popular choice for cake coverings it is a pliable rollable sugar-based paste which can be coloured and rolled thinly to cover your baked Christmas cake or sponge. When dry it is a perfect stable base for adding decoration. It is traditional to cover your fruit cake firstly with Marzipan a.k.a. almond paste, before covering it with sugar paste, fondant icing or royal icing. Modelling paste is a pliable firm medium which holds its shape when made into models for Christmas decorations.
