Milk couverture chocolate (Cocoa solids 35% minimum, Milk solids 21% minimum)

Ingredients: Sugar, Cocoa Butter, Whole Milk Powder, Cocoa Mass, Emulsifier: Soya Lecithin, Natural Vanilla Flavouring.

Contains MilkSoya, may also contain traces of nut.

 

Tempering:

The purpose of tempering chocolate is to pre-crystallise the cocoa butter in the chocolate. This ensures the hardness and gloss of the finished product after it has cooled. If the chocolate is melted in the normal way (between 40 and 45 °C) then left to cool to working temperature, the finished product will not be glossy. If you make the effort of using a special way of bringing chocolate up to the right working temperature, you are guaranteed to get the desired end result.

 

How to temper chocolate:

Firstly don't melt all of the chocolate at once. You'll need about 15-20% of unmelted in order to temper the chocolate. Melt the rest of the chocolate either in the microwave (stiring every 20 seconds in an 800W microwave, stir more often for more powerful microwaves) or a double jacketed pan (make sure you don't get any water in your chocolate.) You need to melt the chocolate to about 40-45 degrees, make sure you don't overheat the chocolate otherwise it will scorch, seize and become unuseable. Now remove the chocolate from the heat and after a few moments add the unmelted chocolate. Allow the unmelted chocolate to melt without applying more heat, once melted your ready to use your tempered chocolate.
