Expensive but worth the money !!
I got this knife for Christmas 09 and have used it several times since usually for cutting and shaping sponge cake. It’s really sharp and glides through sponge leaving a clean line. The only disadvantage is the knife is quite long which can make it a bit tricky to use on smaller cakes. It is expensive but an excellent make (Victorinox) and will last a life time.
