Double Chocolate Muffins

Plain Scones:

Makes 12 scones

  • 250g self-raising flour
  • pinch salt
  • 30g butter, cut into small pieces
  • 125ml milk
  • 80ml water
  • extra milk to glaze



Be traditional and serve with whipped cream and jam

Or why not make some savoury scones by adding some cheese to the dough

The pinch of salt is an important ingredient even in the sweet scones. Salt will enhance the flavour but won't be tasted in the cooked scones.

You can also try using our premade scone mix



Step 1:
Preheat the oven to 210°C (415°F/ Gas 6-7).
Sift the flour and salt into a large mixing bowl.
Add the butter and rub in lightly using your fingertips.


Step 2:
Make a well in the centre of the flour. Add almost all the combined milk and water.
Mix to a soft dough adding more liquid if necessary.


Step 3:
Turn the dough onto a lightly floured surface (use self-raising flour).
Knead the dough briefly and lightly smooth.
Press or roll out the dough to form a circle about 1-2cm (½" - ¾") thick.


Step 4:
Cut the dough into individual 'rounds' using a floured round 5cm (2") cutter.
Place on a greased baking tray and glaze with milk.
Bake for 10-12 minutes, or until golden brown.
